Two Extreme Perspectives
Is bartending an art form, or is it a service?
Within our industry, two completely opposite voices have long coexisted. One side elevates bartending to a pedestal, viewing it as a pure art and the bartender as a creative artist. The other side reduces it to a basic hospitality service, arguing that as long as the guest is catered to and the protocols are followed, the job is done.
However, I believe both extreme perspectives missed the mark. They are a bit too absolute.

Self-Indulgence vs. Burnout
If you treat mixology purely as an art, it is incredibly easy to fall into a trap of creative self-indulgence. You might pour your energy into crafting a monumental concept, filling the menu with profound philosophical jargon. Yet, the moment that drink is served, the guest takes a sip and might simply wonder: “Does this actually taste good?”
Art detached from the consumer experience is nothing more than self-gratification.
Conversely, if bartending is stripped down to raw service—mechanically running through the same recommendation scripts and engaging in dry, hollow small talk—it won’t be long before your charisma and inner passion are completely burned out.

The Magic on the Borderline
Therefore, I find that the most intriguing and beautiful aspect of bartending lies precisely in the fact that it straddles the borderline of art and service.
It is about delivering an exceptional product, while intimately understanding the human heart.
It requires a fierce professional discipline regarding flavor development, paired with a razor-sharp intuition for the emotional shifts of the person sitting across from you. You know exactly when to utilize a cocktail to express yourself and showcase your craft, and when to take a step back, leaving the stage entirely to the soul resting behind that glass.

The Liquid Medium
The true soul of a bar has never been the expensive liquid inside the glass.
It is using the drink merely as a medium—a bridge to seek understanding, and to touch the vibrant, living human being sitting right in front of you.
